Define defpolls dynamically/with variables

I'm trying to set up a world clock kind of thing, and don't want to have to define a defpoll for each timezone. My thinking was something like

(defpoll datetime [tz] :interval "1s" `TZ=${tz} date '+%a %F %R %Z`)

but that doesn't appear to be valid
