Andrew Ng created a new series of courses, updating his original ML Coursera course. It's a time commitment, but it gets you more into understanding the theory (not deep, but deeper that fast.ai). This will help you navigate the changes from library to library over time.

Daniel Kaplan is a great teacher, and covers the topic of statistical modeling--USEFUL statistical model--with great skill. This modeling approach is a extraordinarily powerful way to answer business and clinical questions. His book, Statistical Modeling, A Fresh Approach (2nd Edition) is a good introduction.
