Docker installation instructions - update needed

Hello Nathan @ngardiner ,

would it be please possible to update instalation instructions in order to be able to successfully install and have functional TWC Manager? I always ended with error.

I didn´t succeed with manual and also with docker instalation when stricly followed instructions.

I have already spent 2 days on it without success and that´s why I would like kindly ask for help as my 2 TWC need to be back under TWC Manager control soon.

Docker installation instruction at https://github.com/ngardiner/TWCManager/blob/main/docs/Software_Docker.md mention as last stable version 1.2.4 instead current 1.3.1

I also didn´t succeed with Manual install - error reported - #557
