Update perf-test scripts with latest KWOK items

Updates to KWOK as well as the MCAD CRDs require updates to the docs and scripts of the perf-tests under MCAD

Steps to Reproduce the Bug

1. KWOK would probably install with the old instructions, but it's not as efficient as the new install method
2. The appwrappers don't launch because of an Item error that needs to be tweaked
3. The appwrapeprs don't clean up because there's some confusion on which appwrapper crd is default.

What Have You Already Tried to Debug the Issue?

I'm going to update the scripts so they work.

Expected Behavior

KWOK should be installed in-cluster easily
appwrappers should launch

Testing of PR 695 is looking good in testing, but I see the e2e test isn't working for some reason... interesting.
