- 4 - 5 chicken breasts
- 1 1/2 cups raw rice
- chicken broth
- 1 cup diced celery
- 3 - 4 tablespoons pimento
- 2 stalks chopped green onions
- 1 - 10 oz. box frozen petite peas
- 1 - 2 small bag slivered almonds
- 1 cup mayonnaise
- 2 pinches green curry
- to taste salt & pepper
Shred chicken. Cook the 1 1/2 cups of raw rice in chicken both according to the rice package. Once the rice is cooled and the chicken is shredded, combine all of the ingredients except the mayonnaise and curry. In a separate bowl mix together the mayonnaise and curry and mix it into the chicken and rice mixture you have made. Serve cold.
