Added interfaceOpts Adapted to usage in amnezia-wg

Can you elaborate a bit more on what you had in mind with respect to this? Are you looking to add those changes in this PR?

This isn't a requirement but just sharing so you know it's available, if you have a particular use case you want to add test coverage for, you can add a value/settings file suffixed with -values here: https://github.com/bryopsida/wireguard-chart/tree/main/helm/wireguard/ci and that config will be used in CI.
